For Independence Day
Adapted slightly from All Recipes
Of course I'm biased, but this was one of the best peach cobblers I've ever had.
INGREDIENTS
8-10 peaches, sliced
1/4 C white sugar
1/4 C brown sugar
1 t ground cinnamon
1/4 t ground nutmeg
1/4 t ground cloves
1 t lemon juice
2 t corn starch (mix into lemon juice)
1 C flour
1/4 C white sugar
1/4 C brown sugar
1 t baking powder
1/2 t salt
6 t unsalted butter, cubed
1/4 C boiling water
1 1/2 T white sugar
1/2 t ground cinnamon
DIRECTIONS
1. Preheat oven to 425-degrees F. Grease cast iron skillet with butter.
2. Combine first set of ingredients in large bowl. Pour into skillet, bake for 10 minutes.
3.
Combine second set of dry ingredients. Blend in butter with fingertips
until mixture resembles coarse meal. Stir in water until just combined.
4. Remove peaches from oven. Spoon
topping over peaches. Combine cinnamon and sugar, then sprinkle over
topping.
5. Bake until topping is golden, about 30 minutes.
